Beef curry

Ingredients

  • 500 g (17 oz) beef stew cubes
  • 60 ml (4 tbsp) canola oil
  • 2 onions, thinly sliced
  • 30 ml (2 tbsp) massaman curry
  • 2 cloves garlic, minced
  • 250 ml (1 cup) coconut milk
  • 4 whole Bird's eye chilies
  • 1 stick lemongrass, halved and lightly crushed
  • ½ bunch coriander, leaves removed, chopped
  • 250 ml (1 cup) spinach leaves
  • 15 ml (1 tbsp) sugar
  • 250 ml (1 cup) beef broth

Preparation

  1. In a pot of boiling water, immerse the beef cubes and cook, covered, over medium heat for 60 minutes. Remove and drain the meat cubes.
  2. In a skillet, brown the meat in canola oil for 2 minutes.
  3. Add the onion and brown for 2 more minutes.
  4. Add the curry, garlic, coconut milk, chilies, lemongrass, spinach leaves, sugar, beef broth and coriander. Check the seasoning and enjoy.
