Crab curry

Ingredients

  • 500 ml (2 cups) crab meat or snow leg
  • 500 ml (2 cups) Chinese celery, cut into pieces
  • 60 ml (4 tbsp) canola oil
  • 2 eggs
  • 15 ml (1 tbsp) tomato paste
  • 2 cloves garlic, minced
  • 30 ml (2 tbsp) yellow curry powder
  • 30 ml (2 tbsp) turmeric powder
  • 1 onion, minced
  • 15 ml (1 tbsp) hot sauce
  • 60 ml (4 tbsp) fish sauce
  • 1 L (4 cups) chicken or fish broth

Preparation

  1. In a hot saucepan, brown the crab pieces and celery in the canola oil
  2. Crack the eggs into the pan and cook while stirring.
  3. Add the tomato paste, garlic, curry, turmeric, onion, hot sauce, fish sauce and let it cook for 2 minutes.
  4. Then add the broth and let it cook over low heat for 10 minutes. Check the seasoning.
  5. Enjoy, accompanied by steamed rice.
