Mont Blanc with chestnut cream dessert

Ingredients

  • 250 ml (1 cup) pecans
  • 125 ml (½ cup) sugar
  • 250 ml (1 cup) chestnut cream
  • 30 ml (2 tablespoons) Grand Marnier
  • 500 ml (2 cups) 35% cream
  • 90 ml (6 tbsp) maple syrup
  • 6 graham crackers, crushed

Preparation

  1. In a skillet, toast pecans for 2 minutes.
  2. Add sugar and stir until lightly browned.
  3. Pour onto oiled parchment paper or silicone mat.
  4. Cool, then crush coarsely.
  5. In a bowl, combine the crème de marron and Grand Marnier.
  6. Using a whisk or electric mixer, blend the cream and maple syrup until stiff. Fill a pastry bag.
  7. Divide the cookies between 4 glasses or dessert bowls, followed by the crème de marron. Garnish with whipped cream and caramelized pecans.
