Ingredients
- 250 ml (1 cup) pecans
- 125 ml (½ cup) sugar
- 250 ml (1 cup) chestnut cream
- 30 ml (2 tablespoons) Grand Marnier
- 500 ml (2 cups) 35% cream
- 90 ml (6 tbsp) maple syrup
- 6 graham crackers, crushed
Preparation
- In a skillet, toast pecans for 2 minutes.
- Add sugar and stir until lightly browned.
- Pour onto oiled parchment paper or silicone mat.
- Cool, then crush coarsely.
- In a bowl, combine the crème de marron and Grand Marnier.
- Using a whisk or electric mixer, blend the cream and maple syrup until stiff. Fill a pastry bag.
- Divide the cookies between 4 glasses or dessert bowls, followed by the crème de marron. Garnish with whipped cream and caramelized pecans.
