Lightly smoked bbq turkey

LIGHTLY SMOKED BBQ TURKEY

Portions : 4 - Brining time : 12 hours - Cooking time : 125 to 130 minutes

Ingredients

Brine

  • 2 onions, chopped
  • 2 garlic cloves, chopped
  • 4 bay leaves
  • 125 ml (½ cup) salt
  • 125 ml (½ cup) sugar
  • 4 sprigs thyme, leaves removed
  • 60 ml (4 tbsp.) ground pepper
  • ½ Québec turkey
  • Qs water

The turkey

  • 90 ml (6 tbsp) canola oil
  • 4 garlic cloves, minced
  • 5 ml (1 tsp.) chili flakes
  • 90 ml (6 tbsp) honey
  • 4 onions, thickly sliced
  • ½ turkey, brined
  • 500 ml (2 cups) chicken broth
  • 500 ml (2 cups) dry white wine
  • salt and pepper to taste
  • 1 pierced aluminum dish containing wood shavings.

Preparation

  1. In a large container, add and mix onions, garlic, bay leaf, salt, sugar, thyme and pepper, water, then place ½ turkey. Add enough water to completely cover the turkey. Close the container and leave to brine in the fridge for 12 hours.
  2. Remove and dry the ½ turkey in a clean cloth.
  3. Preheat the BBQ.
  4. In a bowl, mix oil, garlic, hot pepper, honey, salt and pepper. Check seasoning.
  5. In the bottom of a roasting pan, spread the onion rings and place the turkey on top. Add the white wine and stock. Brush the turkey with the prepared mixture and pour the rest over the turkey.
  6. Place the aluminum dish containing the wood pieces over the flame.
  7. Place the roasting pan on the BBQ grill, with the lid closed, to cook indirectly for 2 hours. From time to time, baste the turkey with its juices.
  8. Remove the turkey from the roasting pan, place it on the BBQ grill and cook until nicely browned.
  9. Serve the turkey with its juices, onions and a side dish of your choice.
