Ingredients
- 2 turkey drumsticks
- 30 ml (2 tablespoons) tomato paste
- 2 garlic cloves, chopped
- 250 ml (1 cup) carrot, brunoise
- 250 ml (1 cup) celery, brunoise
- 250 ml (1 cup) onion, chopped
- 2 bay leaves
- 4 sprigs thyme, leaves removed
- 1 pinch cayenne pepper
- 125 ml (½ cup) honey
- 500 ml (2 cups) dark beer
- 125 ml (½ cup) whisky
- 1l (4 cups) chicken broth
- 60 ml (4 tablespoons) olive oil
- 4 portions fresh cooked pasta
- salt and pepper to taste
Preparation
- Preheat oven, rack in center, to 150°C (300°F).
- Place turkey drumsticks in an ovenproof dish, add tomato paste, garlic, carrot, celery, onion, bay leaf, thyme, cayenne pepper, honey, beer, whisky, broth and bake for 4 hours.
- Remove and, on a work surface, shred the meat.
- On the stove, reduce the cooking juices, if necessary. Check seasoning.
- Add the shredded meat to the reduced cooking juices.
- Serve with fresh pasta.
