Whiskey turkey

Ingredients

  • 2 turkey drumsticks
  • 30 ml (2 tablespoons) tomato paste
  • 2 garlic cloves, chopped
  • 250 ml (1 cup) carrot, brunoise
  • 250 ml (1 cup) celery, brunoise
  • 250 ml (1 cup) onion, chopped
  • 2 bay leaves
  • 4 sprigs thyme, leaves removed
  • 1 pinch cayenne pepper
  • 125 ml (½ cup) honey
  • 500 ml (2 cups) dark beer
  • 125 ml (½ cup) whisky
  • 1l (4 cups) chicken broth
  • 60 ml (4 tablespoons) olive oil
  • 4 portions fresh cooked pasta
  • salt and pepper to taste

Preparation

  1. Preheat oven, rack in center, to 150°C (300°F).
  2. Place turkey drumsticks in an ovenproof dish, add tomato paste, garlic, carrot, celery, onion, bay leaf, thyme, cayenne pepper, honey, beer, whisky, broth and bake for 4 hours.
  3. Remove and, on a work surface, shred the meat.
  4. On the stove, reduce the cooking juices, if necessary. Check seasoning.
  5. Add the shredded meat to the reduced cooking juices.
  6. Serve with fresh pasta.
