Ingredients
- 1 red onion, thinly sliced
- 60 ml (4 tablespoons) olive oil
- 3 mangoes, cubed
- 2 garlic cloves, minced
- 1 pinch cayenne pepper
- 24 cherry tomatoes, halved
- 60 ml (4 tbsp)white vinegar
- 125 ml (½ cup) coconut milk
- 250 ml (1 cup) vegetable stock
- 4 to 8 sea bream fillets
- 4 portions cooked rice
- Salt and pepper to taste
Preparation
- In a hot frying pan, sauté the onion in some of the oil for 2 minutes.
- Add the mango, garlic, chili, tomatoes, vinegar, coconut milk and stock and reduce over medium heat for 5 minutes. Check seasoning.
- In a hot frying pan, sear the sea bream fillets in the remaining oil.
- Serve with rice and the sauce.
