Sea bream with mango

Serves : 4

Preparation time: 10 minutes

Cooking time: 10 to 12 minutes

Ingredients

  • 1 red onion, thinly sliced
  • 60 ml (4 tablespoons) olive oil
  • 3 mangoes, cubed
  • 2 garlic cloves, minced
  • 1 pinch cayenne pepper
  • 24 cherry tomatoes, halved
  • 60 ml (4 tbsp)white vinegar
  • 125 ml (½ cup) coconut milk
  • 250 ml (1 cup) vegetable stock
  • 4 to 8 sea bream fillets
  • 4 portions cooked rice
  • Salt and pepper to taste

Preparation

  1. In a hot frying pan, sauté the onion in some of the oil for 2 minutes.
  2. Add the mango, garlic, chili, tomatoes, vinegar, coconut milk and stock and reduce over medium heat for 5 minutes. Check seasoning.
  3. In a hot frying pan, sear the sea bream fillets in the remaining oil.
  4. Serve with rice and the sauce.
