Ingredients
- 120 ml (8 tablespoons) olive oil
- 1 clove garlic, minced
- 30 ml (2 tbsp.) Cajun spice blend
- 2 sprigs thyme, leaves thinned
- 1 ml (1/4 tsp.) Liquid Smoke
- 15 ml (1 tbsp.) honey
- 4 sea bream fillets
- 4 burger buns
- 60 ml (4 tbsp.) mayonnaise
- 4 lettuce leaves
- 4 red onion rings
- 1 mango, sliced
- 60 ml (4 tbsp.) coriander leaves, chopped
- 1 lime, quartered
- salt and pepper to taste
Preparation
- In a bowl, combine olive oil, garlic, Cajun spices, thyme, liquid smoke, honey, salt and pepper.
- Brush dorade fillets with the prepared mixture.
- Roll each fillet on itself to form a roll, and stick a toothpick in to hold it in place.
- In a hot frying pan, sear the sole fillets for 2 minutes on each side, then reduce the heat and continue cooking for 5 to 6 minutes, until the inside of the rolls are cooked.
- Meanwhile, toast the buns.
- Top each roll with mayonnaise, lettuce, red onion, mango, coriander, a fish fillet and the juice of a lime wedge.
