Honey foam

Ingredients

  • 250 ml (1 cup) Québec honey
  • 250 ml (1 cup) water
  • 1 pinch salt
  • 4 g Versawhip
  • 2 g Xanthan gum

Preparation

Blend honey, water, salt, Versawhip and Xanthan gum in the bowl of a stand mixer, using a whisk, until stiff and frothy.
