Ingredients
- 5 egg yolks
- 30 ml (2 tablespoons) vanilla extract
- 15 ml (1 tbsp.) cornstarch
- 1 pinch salt
- 90 ml (6 tablespoons) rum
- 1.5 l (6 cups) milk
- 125 ml (1/2 cup) 35% cream
The classic version
- 3 ml (1/2 tsp.) ground cinnamon
- 1 pinch cloves
- The zesty version
- 1/2 lemon, zest
- 1/2 orange, zest
- 90 ml (6 tbsp) Amaretto
The cocoa version
- 15 ml (1 tbsp.) Cacao Barry 100% cocoa powder
- 45 ml (3 tbsp) mint liqueur
Preparation
- In a bowl, whisk together eggs, vanilla, cornstarch, salt, rum and ingredients for chosen version.
- In a saucepan, bring the milk and cream to the boil.
- Gradually add the hot mixture to the mixture in the bowl.
- Return the entire mixture to the saucepan and bring to a gentle simmer, until slightly thickened.
- Allow to cool before serving.
