Rolled turkey cutlets with bell pepper confit and cheese

TURKEY CUTLETS ROLLED IN BELL PEPPER CONFIT AND CHEESE

Portions : 4 - Preparation : 15 minutes - Cooking : 20 minutes

Ingredients

  • 250 ml (1 cup) roasted red peppers, chopped
  • 1 garlic clove, chopped
  • 4 Québec turkey cutlets
  • 250 ml (1 cup) mozzarella cheese
  • 60 ml (4 tbsp) fat of your choice (butter, oil or Mycryo cocoa butter)
  • 60 ml (4 tablespoons) parsley leaves, chopped
  • 750 ml (3 cups) tomato sauce
  • Salt and pepper to taste
  • Kitchen string

Preparation

  1. In a bowl, combine peppers, garlic, salt and pepper.
  2. Lay turkey cutlets flat on work surface.
  3. Spread the bell pepper mixture and mozzarella over each cutlet, then roll or close the cutlets into a paupiette shape. To keep them tightly rolled, tie them with a piece of string (optional).
  4. In a hot frying pan, sear each roll, coated with Mycryo butter, or in the fat of your choice, for 2 minutes on each side.
  5. Add tomato sauce, salt and pepper and simmer over low heat for 15 minutes. Check seasoning.
  6. Serve with pasta or polenta.
