TURKEY CUTLETS ROLLED IN BELL PEPPER CONFIT AND CHEESE
Portions : 4 - Preparation : 15 minutes - Cooking : 20 minutes
Ingredients
- 250 ml (1 cup) roasted red peppers, chopped
- 1 garlic clove, chopped
- 4 Québec turkey cutlets
- 250 ml (1 cup) mozzarella cheese
- 60 ml (4 tbsp) fat of your choice (butter, oil or Mycryo cocoa butter)
- 60 ml (4 tablespoons) parsley leaves, chopped
- 750 ml (3 cups) tomato sauce
- Salt and pepper to taste
- Kitchen string
Preparation
- In a bowl, combine peppers, garlic, salt and pepper.
- Lay turkey cutlets flat on work surface.
- Spread the bell pepper mixture and mozzarella over each cutlet, then roll or close the cutlets into a paupiette shape. To keep them tightly rolled, tie them with a piece of string (optional).
- In a hot frying pan, sear each roll, coated with Mycryo butter, or in the fat of your choice, for 2 minutes on each side.
- Add tomato sauce, salt and pepper and simmer over low heat for 15 minutes. Check seasoning.
- Serve with pasta or polenta.
