Ingredients
- 2 Quebec pork tenderloins, cut in half
- 60 ml (4 tbsp) olive oil
- 2 onions, thinly sliced
- 15 ml (1 tbsp) cumin seeds, ground
- 15 ml (1 tbsp) sweet paprika
- 15 ml (1 tbsp) coriander seeds, ground
- 2 lemons, juice
- 30 ml (2 tbsp) honey
- 250 ml (1 cup) broth
- 250 ml (1 cup) green olives
- 1 pinch saffron
- 1 zucchini, diced
- 2 cloves garlic, minced
- 4 servings cooked medium wheat semolina
- Salt and pepper to taste
Preparation
- Salt and pepper the meat.
- In a hot skillet, sear the meat in the oil for 2 minutes on each side.
- Add the onion and brown for another 2 minutes.
- Add the cumin, paprika, coriander, lemon juice, honey, broth, olives, saffron, diced zucchini, garlic and cook over medium heat for 10 minutes, turning the pork fillets from time to time. Check the seasoning.
- Serve with wheat semolina.
