Portuguese pork tenderloin

Ingredients

  • 2 Quebec pork tenderloins, cut in 2
  • 15 ml (1 tbsp) sweet paprika
  • 45 ml (3 tbsp) fat of your choice (canola oil, butter or Mycryo cocoa butter)
  • 1 lemon, cut into 4 slices
  • 125 ml (1/2 cup) low-sodium chicken broth
  • 12 cherry tomatoes, cut in half
  • 1 pinch dried thyme
  • 1 pinch dried oregano
  • 1 pinch rosemary
  • 5 ml (1 tsp) piri piri sauce
  • 2 cloves garlic, minced
  • 5 ml (1 tsp) sugar
  • 5 ml (1 tsp) hot mustard
  • 30 ml (2 tbsp) sherry vinegar
  • Salt and pepper to taste

Preparation

  1. Sprinkle the paprika with salt and pepper. pork fillets.
  2. In a hot pan, brown the pork fillets for 2 minutes on each side, in the fat of your choice and at the same time brown the lemon slices.
  3. Add the broth, tomatoes, thyme, oregano, rosemary, piri piri, garlic, sugar, mustard and vinegar.
  4. Cook for 10 minutes over medium heat, turning the pork fillets in the sauce from time to time.
  5. Serve the meat, accompanied by saffron rice.
