Ingredients
- 2 Quebec pork tenderloins, cut in 2
- 15 ml (1 tbsp) sweet paprika
- 45 ml (3 tbsp) fat of your choice (canola oil, butter or Mycryo cocoa butter)
- 1 lemon, cut into 4 slices
- 125 ml (1/2 cup) low-sodium chicken broth
- 12 cherry tomatoes, cut in half
- 1 pinch dried thyme
- 1 pinch dried oregano
- 1 pinch rosemary
- 5 ml (1 tsp) piri piri sauce
- 2 cloves garlic, minced
- 5 ml (1 tsp) sugar
- 5 ml (1 tsp) hot mustard
- 30 ml (2 tbsp) sherry vinegar
- Salt and pepper to taste
Preparation
- Sprinkle the paprika with salt and pepper. pork fillets.
- In a hot pan, brown the pork fillets for 2 minutes on each side, in the fat of your choice and at the same time brown the lemon slices.
- Add the broth, tomatoes, thyme, oregano, rosemary, piri piri, garlic, sugar, mustard and vinegar.
- Cook for 10 minutes over medium heat, turning the pork fillets in the sauce from time to time.
- Serve the meat, accompanied by saffron rice.
