Pork fillet stuffed with dates and nuts

Ingredients

  • 8 dates, pitted
  • 125 ml (1/2 cup) pecans
  • 60 ml (4 tbsp) 35% cream
  • 2 cloves garlic, minced
  • 60 ml (4 tbsp) breadcrumbs
  • 2 Quebec pork tenderloins
  • 30 ml (2 tbsp) fat of your choice (butter, oil or Mycryo cocoa butter)
  • Salt and pepper to taste

Preparation

  1. Preheat the oven, rack in the middle to 200 °C (400 °F).
  2. On a cutting board, using a knife, chop the dates and pecans.
  3. In a bowl, mix the dates, pecans, cream, garlic and breadcrumbs.
  4. In a hot frying pan, brown the pork fillets coated with Mycryo butter or in the fat of your choice.
  5. On a cutting board, using a knife, open each pork fillet like a wallet.
  6. On a baking sheet, place the fillets, garnish with the prepared mixture and cook in the oven for 20 minutes.
