Grilled pork tenderloin with olive tapenade

GRILLED PORK TENDERLOIN WITH OLIVE TAPENADE

Portions : 4 - Preparation : 5 minutes - Cooking time : 12 to 15 minutes

Ingredients

  • 125 ml (1/2 soup) cup olive oil
  • 125 ml (1/2 tablespoon) green olives
  • 30 ml (2 tablespoons) capers, rinsed
  • 1 clove garlic, minced
  • 45 ml (3 tablespoons) honey
  • 30 ml (2 tablespoons) white wine vinegar
  • 2 sprigs thyme, leaves removed
  • 2 Québec pork tenderloins
  • Salt and pepper to taste
  • 30 ml (2 tablespoons) fat of your choice (butter, oil or Mycryo cocoa butter)

Preparation

  1. Preheat BBQ to maximum.
  2. Using a small blender, purée the olive oil, olives, capers, garlic, honey, vinegar, thyme and a little pepper.
  3. Season pork fillets with salt and pepper and coat with fat of your choice.
  4. On the BBQ grill, sear each pork tenderloin for 2 minutes on each side.
  5. Then spread the tapenade over the top of each tenderloin. Turn off one of the burners, place the pork tenderloins on the side with the burners off, close the lid and cook indirectly for 8 to 10 minutes, depending on desired doneness.
  6. Just before serving, slice the pork tenderloins and serve with roasted potatoes and grilled vegetables.
