Ingredients
Pork
- 4 Quebec pork tenderloin steaks
- 5 ml (1 tsp) ground coffee
- 2 cloves garlic, minced
- 30 ml (2 tbsp) maple syrup or honey
- 60 ml (4 tbsp) sour cream
- Salt and pepper to taste
Sautéed chickpeas
- 8 slices bacon, chopped
- 1 L (4 cups) chickpeas
- 15 ml (1 tbsp) tomato paste
- 1 leek, thinly sliced
- 2 cloves garlic, minced
- 1 L (4 cups) spinach leaves
- Salt and pepper to taste
Preparation
- Preheat the oven, rack in the middle, to 200 °C (400 °F).
- In a bowl, mix the coffee, garlic and maple syrup.
- Salt and pepper then coat the fillet steaks with the prepared mixture.
- On a baking sheet, arrange the steaks and cook in the oven for 15 to 20 minutes, depending on the desired doneness.
- In the meantime, in a hot pan, brown the bacon for 2 to 3 minutes.
- Add the chickpeas, tomato paste, garlic, leek, spinach and cook for 5 to 6 minutes over medium heat. Check the seasoning.
- On each plate, divide the prepared vegetables, pork steaks and sour cream.
