Focaccia fresca with avocado

Focaccia fresca à l’avocat

Serves : 4

Preparation time: 20 minutes

Cooking time: about 5 minutes

Ingredients

  • 1 ball pizza dough
  • 90 ml (8 tablespoons) olive oil
  • 2 sprigs thyme, leaves removed
  • 1 clove garlic, minced
  • 15 ml (1 tbsp.) balsamic vinegar
  • 2 avocados, brunoise
  • 30 ml (2 tbsp.) sun-dried tomatoes, chopped
  • 30 ml (2 tbsp.) capers
  • 8 thin slices Prosciutto
  • 250 ml (1 cup) arugula
  • salt and pepper to taste

Preparation

  1. Preheat oven, rack in center with pizza pan, to 290°C (550°F),
  2. Roll out pizza dough on work surface.
  3. In a bowl, combine the olive oil, thyme and garlic. Brush half the mixture over the pizza dough.
  4. Season with salt and pepper, place on a pizza tray in the oven and bake for a few minutes, until the dough puffs up slightly and is cooked through. Allow to cool.
  5. Meanwhile, add the balsamic vinegar, avocado, sun-dried tomatoes and capers to the remaining mixture. Check seasoning.
  6. Top the pizza with the mixture, Proscuitto slices and arugula.
