Fondant chocolat

Ingredients

  • 150 ml (10 tbsp) / 100 g Ocoa 70% cocoa chocolate
  • 75 ml (5 tbsp) / 100 g butter
  • 2 eggs
  • 75 ml (5 tbsp) / 70 g sugar
  • 1 orange, zest
  • 8 ml (1/2 tbsp) / 10 g cocoa powder
  • 75 ml (5 tbsp) / 50 g cornstarch
  • 1 pinch of salt
  • 5 ml (1 tsp) / 3 g baking powder

Preparation

  1. Preheat the oven, rack in the center to 200 °C (400 °F).
  2. In a bain-marie, melt the chocolate then add the butter. Once everything is homogeneous, remove the bowl from the bain-marie.
  3. Meanwhile, in a bowl, using a whisk, mix the eggs, then add the sugar and zest.
  4. Incorporate the chocolate into the egg mixture.
  5. Incorporate the cocoa powder, pinch of salt, cornstarch and baking powder.
  6. In previously buttered ramekins, pour the prepared mixture and set aside in the refrigerator for at least 30 minutes.
  7. On a baking sheet, arrange the ramekins and bake for 14 minutes.
  8. Serve immediately.
