Pepper gazpacho.

Ingredients

  • 1 tomato, quartered
  • 3 red peppers, diced
  • 1 cucumber, diced
  • 1 shallot
  • 50 gr (1 ¾ oz) breadcrumbs
  • 1 clove garlic
  • 3 sprigs fresh coriander
  • 30 ml sherry vinegar
  • 60 ml (4 tbsp) olive oil ++
  • 2 ml tasbasco

Preparation

  1. In a bowl, combine the tomato, peppers, cucumber, shallot, breadcrumbs, garlic, sherry vinegar, olive oil, salt, pepper and marinate for 60 minutes in the refrigerator.
  2. In the blender, puree everything and whisk in the olive oil. Check the seasoning.
  3. Add Tabasco to taste. Serve chilled.
