Ingredients
- 1 tomato, quartered
- 3 red peppers, diced
- 1 cucumber, diced
- 1 shallot
- 50 gr (1 ¾ oz) breadcrumbs
- 1 clove garlic
- 3 sprigs fresh coriander
- 30 ml sherry vinegar
- 60 ml (4 tbsp) olive oil ++
- 2 ml tasbasco
Preparation
- In a bowl, combine the tomato, peppers, cucumber, shallot, breadcrumbs, garlic, sherry vinegar, olive oil, salt, pepper and marinate for 60 minutes in the refrigerator.
- In the blender, puree everything and whisk in the olive oil. Check the seasoning.
- Add Tabasco to taste. Serve chilled.
