Chocolate banana cake with whisky whipped cream

Ingredients

  • 1 egg
  • 250 ml (1 cup) sugar
  • 125 ml (½ cup) unsalted butter
  • 375 ml (1 ½ cups) mashed banana
  • 125 ml (1/2 cup) 35% cream
  • 1 lemon, zest
  • 5 ml (1 teaspoon) cinnamon, ground
  • 1 pinch salt
  • 15 ml (1 tbsp.) vanilla extract
  • 5 ml (1 tsp.) baking soda
  • 5 ml (1 tsp.) baking powder
  • 375 ml (1 ½ cups) flour
  • 250 ml (1 cup) chocolate chips

Whipped cream

  • 250 ml (1 cup) whipping cream
  • 30 ml (2 tablespoons) maple syrup
  • 45 ml (3 tablespoons) whisky
  • 1 pinch salt

Preparation

  1. Preheat oven, rack in center, to 180°C (350°F).
  2. In a bowl, whisk the egg, then add the sugar and butter.
  3. Add mashed banana, cream, lemon zest, cinnamon, salt and vanilla extract.
  4. Stir in bicarbonate, baking powder and flour until smooth.
  5. Add the chocolate chips.
  6. Place the mixture in a buttered and floured cake tin and bake for 60 minutes.
  7. Leave to cool.
  8. Whisk cream, whisky, maple syrup and a pinch of salt in a bowl until stiff.
  9. Serve cake and whipped cream with whisky.
