Ingredients
- 2 whole eggs
- 3 yolks
- 250 ml (1 cup) butter, soft
- 250 ml (1 cup) sugar
- 1 orange, zested
- 500 ml (2 cups) almond powder
- 1 pinch salt
- 125 ml (1/2 cup) flour
- 90 ml (6 tbsp) Cacao Barry cocoa powder
- 250 ml (1 cup) dark chocolate, melted
- Topping and decoration
- 125 ml (½ cup) orange jam
- 60 ml (4 tbsp.) white chocolate, melted
- 60 ml (4 tablespoons) milk chocolate, melted
Preparation
- Preheat oven, rack in center, to 190°C (375°F).
- Whisk eggs and butter in a bowl.
- Add the sugar and mix until smooth.
- Then add the zest, almond powder, salt, flour, cocoa powder and melted chocolate.
- Pour the mixture into a buttered cake tin and bake for 30-35 minutes.
- Leave to cool.
- Cut the cake in half and spread the orange jam over the base, reshape the cake and decorate with melted chocolate.
