CHOCOLATE CAKE WITH ICING
Output: 1 - Prep time: 20 minutes - Bake time: 40 minutes
Ingredients
- 250 g (1 1/2 cups) Cacao Barry dark chocolate
- 250 g (1 cup +2 tbsp) unsalted butter
- 4 eggs
- 250 gr (1 cup +2 tbsp) sugar
- 70 gr (1/3 cup +2 tbsp) flour
- 5 ml (1 tsp.) vanilla extract
- 60 ml (4 tbsp) Barry cocoa cocoa powder
- 1 pinch salt
Icing
- 1 block (250 g) cream cheese
- 1 lemon, zest
- 250 ml (1 cup) powdered sugar, sifted
- 15 ml (1 tbsp.) vanilla extract
Preparation
- Preheat oven, rack in center, to 190°C (375°F).
- Melt chocolate and butter in a bowl in a double boiler.
- Meanwhile, in another bowl, whisk together eggs, then add sugar and whisk until fluffy and white.
- Stir in vanilla extract and melted chocolate.
- Stir in flour, cocoa powder and salt.
- Pour the mixture into a buttered 6" to 8" round or square cake tin and bake for 40 minutes, until the center of the cake is firm and the tip of a knife comes out clean.
- Cool completely before decorating.
- In a bowl, whisk together cream cheese, lemon zest, powdered sugar and vanilla.
- Decorate the cake with the prepared icing and set aside in the fridge for 60 minutes.
