Chocolate cake with icing

CHOCOLATE CAKE WITH ICING

Output: 1 - Prep time: 20 minutes - Bake time: 40 minutes

Ingredients

  • 250 g (1 1/2 cups) Cacao Barry dark chocolate
  • 250 g (1 cup +2 tbsp) unsalted butter
  • 4 eggs
  • 250 gr (1 cup +2 tbsp) sugar
  • 70 gr (1/3 cup +2 tbsp) flour
  • 5 ml (1 tsp.) vanilla extract
  • 60 ml (4 tbsp) Barry cocoa cocoa powder
  • 1 pinch salt

Icing

  • 1 block (250 g) cream cheese
  • 1 lemon, zest
  • 250 ml (1 cup) powdered sugar, sifted
  • 15 ml (1 tbsp.) vanilla extract

Preparation

  1. Preheat oven, rack in center, to 190°C (375°F).
  2. Melt chocolate and butter in a bowl in a double boiler.
  3. Meanwhile, in another bowl, whisk together eggs, then add sugar and whisk until fluffy and white.
  4. Stir in vanilla extract and melted chocolate.
  5. Stir in flour, cocoa powder and salt.
  6. Pour the mixture into a buttered 6" to 8" round or square cake tin and bake for 40 minutes, until the center of the cake is firm and the tip of a knife comes out clean.
  7. Cool completely before decorating.
  8. In a bowl, whisk together cream cheese, lemon zest, powdered sugar and vanilla.
  9. Decorate the cake with the prepared icing and set aside in the fridge for 60 minutes.
