Ingredients
- 250 ml (1 cup) 35% cream
- 1 sachet gelatin, rehydrate according to sachet instructions
- 2 limes, zest
- 75 ml (5 tablespoons) maple syrup
- 375 ml (1 1/2 cups) graham crackers, crumbled
- 125 ml (½ cup) butter, melted
- 375 ml (1 1/2 cups) cream cheese
- 2 avocados, mashed
- 1 avocado for garnish
Preparation
- In a saucepan, warm the cream and stir in the gelatin. Add zest, maple syrup and let cool.
- Meanwhile, in a bowl, combine the graham crackers and melted butter.
- Line the bottom of a springform pan and press down.
- Using a hand mixer, beat cream cheese and avocados until smooth.
- Add the cooled cream and beat until firm but creamy.
- Fill mold with mixture. Refrigerate for 4 hours.
- Decorate with avocado slices just before serving.
