Avocado Cheesecake

Cooking time: 3 to 5 minutes

Chilling time : 4 hours

Ingredients

  • 250 ml (1 cup) 35% cream
  • 1 sachet gelatin, rehydrate according to sachet instructions
  • 2 limes, zest
  • 75 ml (5 tablespoons) maple syrup
  • 375 ml (1 1/2 cups) graham crackers, crumbled
  • 125 ml (½ cup) butter, melted
  • 375 ml (1 1/2 cups) cream cheese
  • 2 avocados, mashed
  • 1 avocado for garnish

Preparation

  1. In a saucepan, warm the cream and stir in the gelatin. Add zest, maple syrup and let cool.
  2. Meanwhile, in a bowl, combine the graham crackers and melted butter.
  3. Line the bottom of a springform pan and press down.
  4. Using a hand mixer, beat cream cheese and avocados until smooth.
  5. Add the cooled cream and beat until firm but creamy.
  6. Fill mold with mixture. Refrigerate for 4 hours.
  7. Decorate with avocado slices just before serving.
