Peach and bitter almond cake

Portions: 4 to 6

Ingredients

  • 2 eggs
  • 100 g (3 1/2 oz) sugar
  • 100 g (3 1/2 oz) soft butter
  • 15 ml (1 tbsp) vanilla extract
  • 5 ml (1 tsp.) bitter almond extract
  • 1 pinch salt
  • 150 gr (5 ¼ oz) flour
  • 50 gr (1 ¾ oz) almond powder
  • 15 ml (1 tbsp) baking powder
  • 4 peaches, cubed
  • 60 ml (4 tbsp) slivered almonds

Preparation

  1. Preheat oven, rack in center, to 190°C (375°F).
  2. Whisk eggs in a bowl, then add sugar, butter, vanilla extract, bitter almond extract and salt.
  3. Gradually incorporate flour, almond powder and baking powder.
  4. Add peach cubes.
  5. Pour the mixture into a cake tin lined with butter and flour, sprinkle the flaked almonds over the top and bake for 40 minutes.
  6. Leave to cool before serving.
  7. NB: Pears, apricots and apples are also perfect substitutes for peaches.
