Ingredients
- 2 eggs
- 100 g (3 1/2 oz) sugar
- 100 g (3 1/2 oz) soft butter
- 15 ml (1 tbsp) vanilla extract
- 5 ml (1 tsp.) bitter almond extract
- 1 pinch salt
- 150 gr (5 ¼ oz) flour
- 50 gr (1 ¾ oz) almond powder
- 15 ml (1 tbsp) baking powder
- 4 peaches, cubed
- 60 ml (4 tbsp) slivered almonds
Preparation
- Preheat oven, rack in center, to 190°C (375°F).
- Whisk eggs in a bowl, then add sugar, butter, vanilla extract, bitter almond extract and salt.
- Gradually incorporate flour, almond powder and baking powder.
- Add peach cubes.
- Pour the mixture into a cake tin lined with butter and flour, sprinkle the flaked almonds over the top and bake for 40 minutes.
- Leave to cool before serving.
- NB: Pears, apricots and apples are also perfect substitutes for peaches.
