G TEAU OF INDIAN SEMOLINA
Portions : 4 - Preparation : 5 minutes - Cooking : 10 minutes
Ingredients
- 500 ml (½ liter) milk
- 75 ml (5 tablespoons) sugar
- ½ lemon, zest
- 3 ml (1/2 tsp.) cardamom, ground
- 15 ml (1 tbsp.) vanilla extract
- 1 pinch salt
- 125 ml (1/2 cup) medium wheat semolina
- 60 ml (4 tbsp.) butter
- 1 egg
Topping
Red berries, pineapple or simple jam of your choice
Preparation
- Bring the milk, sugar, lemon zest, cardamom, vanilla and salt to the boil in a saucepan.
- Over low heat, pour in the semolina, stirring constantly with a spatula.
- When the liquid is completely absorbed and the mixture has a creamy consistency, after about 6 to 8 minutes, turn off the heat.
- Quickly fold the egg into the cooked semolina.
- Place the semolina in a silicone mould or ramekin and, once warm, set aside in the fridge.
- Serve with pan-fried caramelized fruit or jam.
