INGREDIENTS
- 625 ml (2 ½ cups) all-purpose flour
- 20 ml (4 tsp) baking powder
- 1 pinch salt
- 125 ml (1/2 cup) brown sugar
- 2 eggs, yolks and whites separated
- 500 ml (2 cups) milk
- 125 ml (1/2 cup) butter, melted
- 10 ml (2 tsp) vanilla extract
- Enough canola oil to grease waffle iron molds
PREPARATION
- In a bowl, whisk egg whites until stiff.
- In a bowl, combine flour, baking powder, salt and brown sugar.
- With a whisk, whisk in egg yolks, milk, melted butter and vanilla.
- Using a spatula, gently fold in the egg whites by turning them over.
- Once the batter is smooth, let it rest for 1 hour at room temperature.
- Once the waffle iron is hot, lightly grease the waffle iron molds using a brush.
- Pour the waffle mixture into the center of the molds. Close the waffle iron and cook for a few minutes. Repeat the operation until all the batter is used up.
