INGREDIENTS

  • 250 ml (1 cup) sweet potato puree
  • 30 ml (2 tbsp) butter
  • 90 ml (6 tbsp) milk
  • 250 ml (1 cup) all-purpose flour
  • 10 ml (2 tsp) baking powder
  • 2 eggs (whites and yolks separated)
  • 1 pinch of nutmeg
  • Salt and pepper to taste
  • Canola oil

PREPARATION

  1. In a saucepan, melt the butter in the milk.
  2. In a bowl, using a whisk, mix the egg yolks, flour, baking powder, then gradually add the milk and melted butter. Then add the sweet potato puree, salt and pepper.
  3. In another bowl, using a hand mixer, beat the egg whites until stiff.
  4. Gently fold the beaten egg whites into the first mixture using a spatula.
  5. In a hot waffle iron, previously oiled with canola oil using a brush, place a portion of waffle batter and cook for a few minutes. Repeat until all the batter is used up.
  6. To be enjoyed with a soft-boiled egg, sliced ​​avocado, smoked salmon, sour cream with herbs, sautéed mushrooms, candied tomatoes, grilled bacon, cheddar cheese, etc.
