INGREDIENTS
- 250 ml (1 cup) sweet potato puree
- 30 ml (2 tbsp) butter
- 90 ml (6 tbsp) milk
- 250 ml (1 cup) all-purpose flour
- 10 ml (2 tsp) baking powder
- 2 eggs (whites and yolks separated)
- 1 pinch of nutmeg
- Salt and pepper to taste
- Canola oil
PREPARATION
- In a saucepan, melt the butter in the milk.
- In a bowl, using a whisk, mix the egg yolks, flour, baking powder, then gradually add the milk and melted butter. Then add the sweet potato puree, salt and pepper.
- In another bowl, using a hand mixer, beat the egg whites until stiff.
- Gently fold the beaten egg whites into the first mixture using a spatula.
- In a hot waffle iron, previously oiled with canola oil using a brush, place a portion of waffle batter and cook for a few minutes. Repeat until all the batter is used up.
- To be enjoyed with a soft-boiled egg, sliced avocado, smoked salmon, sour cream with herbs, sautéed mushrooms, candied tomatoes, grilled bacon, cheddar cheese, etc.
