For a snack on a rainy or snowy Sunday afternoon... Waffles, yes, but Liège waffles, with pearl sugar that crunches under the tooth and caramelizes during cooking!
Ingredients (for about ten waffles):
- 200 g of flour,
- 2 eggs,
- 1 pinch of fine salt,
- 25 g of fresh baker's yeast or 8 g of instant yeast,
- 100 ml of warm milk,
- 30 g of soft butter,
- 100 g of pearl sugar.
Preparation
- Mix the yeast into the warm milk.
- In the bowl of a stand mixer, add the flour, 2 eggs, a pinch of salt, milk, and yeast. Gradually mix using the paddle attachment until the mixture reaches full speed. Once the mixture is smooth, cover it with a cloth and let it rest for at least 30 minutes.
- Add the softened butter and pearl sugar. Mix with the paddle attachment at medium speed for a few moments.
- Preheat the waffle iron and brush it with a little oil. Once the waffle iron is hot, place a small mound of batter on each plate. Let it cook for a few moments until the waffle forms and is golden brown. Repeat until all the batter is used up.
- Let the waffles cool on a wire rack before enjoying.
