Vegetarian general tao and its vegetables

Ingredients

  • 1 package firm tofu
  • 30 ml (2 tablespoons) cornstarch
  • 60 ml (4 tbsp) canola oil
  • 1 onion, chopped
  • 500 ml (2 cups) vegetables of your choice (red bell pepper, broccoli, snow peas)
  • 1 vegetable stock cube
  • 2 garlic cloves, chopped
  • 30 ml (2 tbsp.) ginger, chopped
  • 30 ml (2 tbsp.) soy sauce
  • 30 ml (2 tbsp.) ketchup
  • 30 ml (2 tbsp.) rice vinegar
  • 60 ml (4 tbsp.) brown sugar
  • 15 ml (1 tbsp) hot sauce (SambalOelek or Sriracha)
  • 4 portions cooked rice

Preparation

  1. Cut tofu into cubes.
  2. In a bowl, season the tofu cubes with salt and pepper, then add the cornstarch and toss to coat.
  3. In a hot frying pan, brown the tofu in some of the oil until golden. Remove and set aside.
  4. In the same pan, in the remaining oil, sauté the onion, vegetables of your choice, garlic and ginger for 3 minutes.
  5. Add the soy sauce, ketchup, vinegar, brown sugar and hot sauce, stir and reduce slightly.
  6. Add the tofu.
  7. Serve with rice.
