7-HOUR LEG OF LAMB WITH BOURSIN CUISINE
Portions : 6 to 8 - Preparation : 20 minutes - Cooking time : 7 hours
Ingredients
- 1 leg of lamb, bone in
- 4 tablespoons olive oil
- 2 large onions, sliced
- 12 cocktail tomatoes
- 1.5 kg (3 lbs) Grelot potatoes, halved
- 1 jar Boursin cuisine Garlic & Herbs
- Salt and pepper to taste
Preparation
- Preheat oven, rack in center, to 140° C (275° F).
- Brush leg of lamb with olive oil. Season with salt and pepper.
- Place the leg of lamb directly on the middle rack of the oven.
- In a large dish, add 500 ml (2 cups) of water and place the dish on the rack under the leg to catch the meat juices.
- Bake for 5 hours.
- Meanwhile, cut the vegetables into quarters. Season with salt and pepper.
- After 5 hours, place the vegetables in the oven dish.
- Remove the leg from the oven and brush with Boursin. Bake for a further 2 hours.
- Serve slices of leg of lamb with the baked vegetables.
