GNOCCHI WITH WALNUT SAUCE
Output: 1 l (4 cups) of sauce - Portions: 8 - Preparation: 5 minutes - Cooking time: 5 minutes
Ingredients
- 500 ml (2 cups) walnuts
- 1 slice sandwich bread, crust removed
- 2 sprigs thyme, leaves thinned
- 3 ml (1/2 tsp.) dried marjoram
- 1 clove garlic, minced
- 250 ml (1 cup) ricotta cheese
- 90 ml (6 tbsp) olive oil
- 1 kg (2.2 lb) homemade or store-bought gnocchi
- Qs Parmesan cheese, grated
- Salt and pepper to taste
Preparation
- In a frying pan, roast the walnuts. Once slightly fragrant, set aside in a bowl and let cool.
- Using a food processor, grind the walnuts, bread, thyme, marjoram, garlic and ricotta.
- Gradually add the olive oil while the processor is running. Check seasoning and set aside in a cool place.
- Place the gnocchi in a pot of boiling, salted water.
- Once cooked, drain and set aside in a large bowl. Add the walnut sauce and serve with a sprinkling of Parmesan cheese on top.
