Ingredients
- 1/2 turkey breast, boiled
- 12 to 16 Brussels sprouts, cut in 2
- 60 ml (4 tbsp.) butter
- 750 ml (3 cups) Butterball homemade stuffing mix
- 2 garlic cloves, minced
- 2 limes, juice and zest of one lime
- 30 ml (2 tbsp.) Tex Mex spice blend
- 250 ml (1 cup) grated Parmesan cheese
- salt and pepper to taste
Preparation
- Preheat oven, rack in center, to 220°C (425°F).
- Flake the boiled turkey breast.
- In a hot skillet, brown the Brussels sprouts in the butter for 5 minutes on each side.
- Add the stuffing mixture and brown.
- Add the garlic, lime juice and zest, shredded turkey and Tex Mex spices.
- Place the mixture in a gratin dish, cover with Parmesan and bake for 15 minutes.
