Gratin of chili and lime turkey breast, sautéed brussels sprouts and homemade stuffing

Ingredients

  • 1/2 turkey breast, boiled
  • 12 to 16 Brussels sprouts, cut in 2
  • 60 ml (4 tbsp.) butter
  • 750 ml (3 cups) Butterball homemade stuffing mix
  • 2 garlic cloves, minced
  • 2 limes, juice and zest of one lime
  • 30 ml (2 tbsp.) Tex Mex spice blend
  • 250 ml (1 cup) grated Parmesan cheese
  • salt and pepper to taste

Preparation

  1. Preheat oven, rack in center, to 220°C (425°F).
  2. Flake the boiled turkey breast.
  3. In a hot skillet, brown the Brussels sprouts in the butter for 5 minutes on each side.
  4. Add the stuffing mixture and brown.
  5. Add the garlic, lime juice and zest, shredded turkey and Tex Mex spices.
  6. Place the mixture in a gratin dish, cover with Parmesan and bake for 15 minutes.
