Salmon Gravelax

SALMON GRAVELAX

Portions : 4 - Preparation time : 15 to 20 hours

Ingredients

  • 1 salmon fillet heart (thickest, about 800 g (27 oz))
  • 250 ml (1 cup) sugar
  • 250 ml (1 cup) coarse salt
  • 3 lemons, zest removed
  • 125 ml (1/2 cup) dill, chopped
  • 125 ml (1/2 cup) steak spice mix

Preparation

  1. In a bowl, combine sugar, coarse salt, lemon zest, dill and steak spices.
  2. Coat both sides of salmon fillet with prepared mixture.
  3. Place in a dish, cover with cling film and refrigerate for 12 to 18 hours.
  4. Rinse salmon fillet under running water, then dry in a dry cloth.
  5. On the work surface, cut the salmon into thin slices.
  6. Serve with homemade mayonnaise, croutons and a green salad.
