SALMON GRAVELAX
Portions : 4 - Preparation time : 15 to 20 hours
Ingredients
- 1 salmon fillet heart (thickest, about 800 g (27 oz))
- 250 ml (1 cup) sugar
- 250 ml (1 cup) coarse salt
- 3 lemons, zest removed
- 125 ml (1/2 cup) dill, chopped
- 125 ml (1/2 cup) steak spice mix
Preparation
- In a bowl, combine sugar, coarse salt, lemon zest, dill and steak spices.
- Coat both sides of salmon fillet with prepared mixture.
- Place in a dish, cover with cling film and refrigerate for 12 to 18 hours.
- Rinse salmon fillet under running water, then dry in a dry cloth.
- On the work surface, cut the salmon into thin slices.
- Serve with homemade mayonnaise, croutons and a green salad.
