Barbecued grilled cheese

Ingredients

  • 12 slices bacon
  • 2 red onions, sliced
  • 60 ml (4 tbsp) maple syrup
  • 60 ml (4 tbsp) melted butter
  • 8 slices bread, homemade style
  • 8 slices cheese of your choice
  • 8 thin slices white ham
  • Salt and pepper to taste

Herb sauce vierge

  • 2 tomatoes, finely diced
  • 1 clove garlic, minced
  • 125 ml (½ cup) olive oil
  • 60 ml (4 tbsp) basil leaves, chopped
  • 60 ml (4 tbsp) chives, chopped
  • 60 ml (4 tbsp) parsley leaves, chopped
  • 60 ml (4 tbsp) white balsamic vinegar
  • 60 ml (4 tbsp) lemon juice
  • 5 ml (1 tsp) sauce sriracha
  • Salt and pepper to taste

Preparation

  1. Preheat the barbecue to medium temperature.
  2. On the barbecue grill, place the bacon slices, onion rings and grill for a few minutes.
  3. In a bowl, mix the onion rings, maple syrup, salt and pepper. Check the seasoning.
  4. Brush one side of each slice of bread with melted butter.
  5. On 4 slices of bread, distribute the cheese, ham, bacon slices and onion rings.
  6. Close and place each sandwich on the barbecue grill, over medium heat, grill for 2 to 3 minutes on each side depending on the coloring.
  7. Continue cooking indirectly if necessary.
  8. In the meantime, in a bowl, mix the tomatoes, garlic, olive oil, basil, chives, parsley, vinegar, lemon juice, sriracha sauce, salt and pepper.
  9. Using a hand blender, reduce everything to a smooth sauce.
  10. Serve the grilled cheese, accompanied by the herbed sauce vierge.
