Grilled cheese phili style

PHILI-STYLE GRILLED CHEESE

Portions : 4 - Preparation : 10 minutes - Cooking : 10 minutes

Ingredients

  • 1 onion, finely chopped
  • 45 ml (3 tablespoons) fat of your choice (butter, oil or Mycryo cocoa butter)
  • 1 green bell pepper, brunoise
  • 1 garlic clove, minced
  • 3 ml (1/2 tsp.) dried thyme
  • 45 ml (3 tbsp.) white balsamic vinegar
  • 8 slices brioche bread
  • 60 ml (4 tbsp.) mayonnaise
  • 8 slices Québec pork bacon, cooked and crisp
  • 250 ml (1 cup) cheddar cheese, grated
  • Qs butter
  • salt and freshly ground pepper to taste

Preparation

  1. In a skillet, sauté the onion in the fat of your choice until browned. Add the bell pepper, garlic and thyme and sauté for a further 2 minutes.
  2. Deglaze with balsamic vinegar. Season with salt and pepper.
  3. On one side of 4 slices of bread, spread 1 tablespoon of mayonnaise, spread the prepared mixture, arrange 2 slices of bacon, sprinkle with grated cheese. Cover with another slice of bread, spreading butter on the top.
  4. In a hot frying pan, brown the sandwich, buttered side down, for 2 minutes. Spread a little butter on the top slice of each. Turn the sandwich over to brown the slice, 2 minutes, while crushing the sandwich with a spatula.
