GRILLED PORK GYROS WITH TZADIKI

Ingredients
The Tzadiki
- 250 ml (1 cup) plain Greek yogurt
- ½ cucumber, drained and grated
- 1 clove garlic, chopped
- 10 mint leaves, finely chopped
- 4 slices Québec pork loin (1" thick)
- 45 ml (3 tbsp.) fat of your choice (butter, oil or Mycryo cocoa butter)
- 15 ml (1 tbsp.) dried oregano
- 2 garlic cloves, minced
- 15 ml (1 tbsp.) thyme, leaves removed
- 125 ml (1/2 cup) white wine
- 4 Greek pita breads
- ½ Boston lettuce
- ½ red onion, thinly sliced
- 2 tomatoes, thinly sliced
Preparation
- In a bowl, combine Greek yogurt, cucumber, garlic, mint, salt and pepper. Check seasoning. Chill the Tzadiki.
- In a hot frying pan, brown the pork loin slices, coated in Mycryo butter or the fat of your choice, for 2 minutes on each side.
- Add oregano, garlic and thyme and deglaze with white wine. Allow the wine to evaporate, then remove from the heat. Check seasoning.
- Cut the slices of meat into strips.
- Heat the pita breads in a frying pan.
- Top each pita with the tzadiki, then arrange the salad leaves, red onion, tomato and meat strips.
