Chicken thigh with tomato and tarragon cream

Ingredients

  • 8 Québec chicken thighs, boneless
  • 90 ml (6 tbsp) flour
  • 90 ml (6 tbsp) canola oil
  • 1 onion, thinly sliced
  • 24 cherry tomatoes
  • 125 ml (½ cup) dark beer
  • 500 ml (2 cups) chicken broth
  • 2 garlic cloves, minced
  • 15 ml (1 tbsp.) fresh or dried tarragon
  • 125 ml (1/2 cup) 35% cream
  • Qs Tabasco
  • 4 portions cooked pasta
  • Salt and pepper to taste

Preparation

  1. Season chicken thighs with salt, pepper and flour.
  2. In a hot skillet, brown the chicken in the canola oil for 2 to 3 minutes on each side.
  3. Add the onion and tomatoes and cook for 3 to 4 minutes.
  4. Deglaze with beer and reduce slightly.
  5. Add broth, garlic, tarragon, cream, Tabasco, salt and pepper and simmer over medium heat for 20 minutes. Check the seasoning.
  6. Serve with pasta.
