Ingredients
- 8 Québec chicken thighs, boneless
- 90 ml (6 tbsp) flour
- 90 ml (6 tbsp) canola oil
- 1 onion, thinly sliced
- 24 cherry tomatoes
- 125 ml (½ cup) dark beer
- 500 ml (2 cups) chicken broth
- 2 garlic cloves, minced
- 15 ml (1 tbsp.) fresh or dried tarragon
- 125 ml (1/2 cup) 35% cream
- Qs Tabasco
- 4 portions cooked pasta
- Salt and pepper to taste
Preparation
- Season chicken thighs with salt, pepper and flour.
- In a hot skillet, brown the chicken in the canola oil for 2 to 3 minutes on each side.
- Add the onion and tomatoes and cook for 3 to 4 minutes.
- Deglaze with beer and reduce slightly.
- Add broth, garlic, tarragon, cream, Tabasco, salt and pepper and simmer over medium heat for 20 minutes. Check the seasoning.
- Serve with pasta.
