OYSTERS AU GRATIN WITH BBQ

Ingredients
- 1 dozen oysters
- 60 ml (4 tablespoons) 35% cream
- 4 slices bacon, grilled and chopped
- 250 ml (1 cup) spinach leaves, chopped
- 45 ml (3 tbsp.) maple syrup
- 1 egg, yolk
- ½ lemon, zest
- 60 ml (4 tablespoons) Panko breadcrumbs
- Salt and pepper to taste
Preparation
- Preheat barbecue to high.
- In a bowl, combine cream, bacon, spinach leaves, maple syrup, egg yolk, lemon zest, salt and pepper.
- Open the oysters and place the prepared mixture in each one, topped with the breadcrumbs.
- Place the oysters on the barbecue grill, close the lid and cook for 8 minutes.
- Let cool and serve.
