ITALIAN-STYLE PORK SHANK WITH GNOOCCHI
Portions : 4 - Preparation time : 15 minutes - Cooking time : just over 4 hours
Ingredients
- 4 small Québec pork shanks
- 60 ml (4 tablespoons) olive oil
- 500 ml (2 cups) vegetable broth
- 1 l (4 cups) homemade tomato sauce
- 250 ml (1 cup) red wine
- 1 onion, chopped
- 3 garlic cloves, chopped
- 2 stalks celery, brunoise
- 1 bay leaf
- 1 sprig rosemary, leaves removed
- 3 sprigs thyme, leaves removed
- 60 ml (4 tbsp.) capers
- 15 ml (1 tbsp.) cornstarch
- 4 portions homemade or store-bought gnocchi
- Qs Parmesan cheese, grated
- Salt and pepper to taste
Preparation
- In a hot skillet, brown the pork shanks in olive oil over high heat for 2 minutes on each side. Season with salt and pepper.
- In the slow cooker, on low, cook the pork shanks in the broth, tomato sauce, red wine, onion, garlic, celery, bay leaf, rosemary and thyme, covered, for 4 hours.
- Add the capers and check the seasoning.
- If the sauce is too runny, dilute the cornstarch in a bowl with a little water, then stir into the sauce over high heat and simmer for a few minutes.
- Meanwhile, cook the gnocchi in a pan of boiling water.
- Place the gnocchi, a ladleful of sauce and a ham hock on each plate.
- Top with a sprinkling of Parmesan and serve.
