Ingredients
- 410 ml (1 2/3 cups) milk
- 190 ml (3/4 cup) 35% cream
- 410 ml (1 2/3 cups) low-sodium chicken broth
- 5 ml (1 tsp) thyme
- 1 clove garlic, minced
- 150 gr (5.5 oz) cornmeal, medium
- 85 gr (3 oz) parmesan cheese, grated
- 30 gr (1 oz) butter
- salt and pepper to taste
Preparation
- In a saucepan, bring the milk, cream, broth, thyme, garlic, salt and pepper to a boil.
- Strain and pour the liquid back into the saucepan.
- Heat the pan over very low heat and pour in the semolina in a drizzle, stirring constantly for about 10 minutes, the time for the semolina to absorb the liquid.
- Add the butter and then the parmesan. Check the seasoning.
