Gourmet polenta

Ingredients

  • 410 ml (1 2/3 cups) milk
  • 190 ml (3/4 cup) 35% cream
  • 410 ml (1 2/3 cups) low-sodium chicken broth
  • 5 ml (1 tsp) thyme
  • 1 clove garlic, minced
  • 150 gr (5.5 oz) cornmeal, medium
  • 85 gr (3 oz) parmesan cheese, grated
  • 30 gr (1 oz) butter
  • salt and pepper to taste

Preparation

  1. In a saucepan, bring the milk, cream, broth, thyme, garlic, salt and pepper to a boil.
  2. Strain and pour the liquid back into the saucepan.
  3. Heat the pan over very low heat and pour in the semolina in a drizzle, stirring constantly for about 10 minutes, the time for the semolina to absorb the liquid.
  4. Add the butter and then the parmesan. Check the seasoning.
