MEXICAN-STYLE TURKEY STRIPS
Portions : 4 - Preparation time : 10 minutes - Cooking time : about 20 minutes
Ingredients
- 700 g (24 oz) Québec turkey breasts, cut into strips
- 60 ml (4 tablespoons) fat of your choice (butter, oil or Mycryo cocoa butter)
- 1 red onion, chopped
- 1 red bell pepper, brunoise
- 1 green bell pepper, brunoise
- 2 garlic cloves, chopped
- 15 ml (1 tbsp.) ground cumin seeds
- 30 ml (2 tbsp.) ground coriander seeds
- 1 ml (1/4 tsp.) ground chili pepper of choice
- 5 ml (1 tsp.) sugar
- 15 ml (1 tbsp.) paprika
- 125 ml (1/2 cup) chicken broth
- 125 ml (1/2 cup) tomato coulis
- 2 limes, zest and juice
- 60 ml (4 tbsp.) fresh coriander, chopped
- salt and pepper to taste
Preparation
- Season turkey strips with salt and pepper.
- In a hot skillet, brown the turkey strips coated with Mycryo butter, or in the fat of your choice, for 2 minutes on each side. Set aside on a plate.
- In the same pan, sauté the red onion and peppers for 2-3 minutes. Add the garlic, cumin, ground coriander, chili pepper, sugar and paprika and stir.
- Then add the broth, tomato coulis, lime zest and juice, and simmer for 5 minutes.
- Add the turkey strips, stir and check the seasoning. Leave to cook for 5 minutes.
- Add fresh coriander and serve with white rice.
