BACON AND TURNIP MAC AND CHEESE

Ingredients
- 8 slices bacon
- 250 ml (1 cup) turnip, cubed
- 1 beef bouillon cube
- 250 ml (1 cup) water
- 4 portions macaroni, cooked al dente
- 500 ml (2 cups) homemade béchamel sauce
- 250 ml (1 cup) cheddar cheese, grated
- 250 ml (1 cup) mozzarella, grated
- 125 ml (½ cup) Parmesan cheese, grated
- 2 green onions, sliced
- 90 ml (6 tablespoons) breadcrumbs
- salt and freshly ground pepper to taste
Preparation
- Preheat oven, rack in center, to 200°C (400°F).
- In a hot skillet, fry bacon until crisp.
- Chop the bacon and set aside.
- In the same pan, in the bacon fat, brown the turnip cubes. Once lightly colored, add the stock cube and water, reduce the heat and cook for 10 minutes.
- In a bowl, mix the pasta, béchamel sauce, bacon, turnips, cheeses and green onions. Check seasoning.
- Pour into a gratin dish, sprinkle with breadcrumbs and bake for 20 minutes.
