Beer and maple pork stew

Ingredients

  • 1 kg (2 lb) Québec Pork cubes
  • 60 ml (4 tablespoons) flour
  • 60 ml (4 tbsp.) olive oil
  • 2 leeks, sliced
  • 2 garlic cloves, chopped
  • 500 ml (2 cups) vegetable broth
  • 1 sprig rosemary
  • 2 sprigs thyme
  • 500 ml (2 cups) dark beer
  • 125 ml (½ cup) strong mustard
  • 500 ml (2 cups) turnips, cubed
  • 125 ml (½ cup) maple syrup
  • Salt and pepper to taste

Preparation

  1. Preheat oven, rack in center, to 160°C (325°F).
  2. Flour pork cubes in a bowl.
  3. In a casserole dish, brown meat cubes in olive oil until browned.
  4. Add leeks and garlic and continue cooking for 3 minutes.
  5. Deglaze with stock to remove all the juices.
  6. Add rosemary, thyme, beer, mustard, turnips, maple syrup, cover and bake for 2 hours. Check seasoning.
  7. Serve with rice and green vegetables.
