Ingredients
- 1 kg (2 lb) Québec Pork cubes
- 60 ml (4 tablespoons) flour
- 60 ml (4 tbsp.) olive oil
- 2 leeks, sliced
- 2 garlic cloves, chopped
- 500 ml (2 cups) vegetable broth
- 1 sprig rosemary
- 2 sprigs thyme
- 500 ml (2 cups) dark beer
- 125 ml (½ cup) strong mustard
- 500 ml (2 cups) turnips, cubed
- 125 ml (½ cup) maple syrup
- Salt and pepper to taste
Preparation
- Preheat oven, rack in center, to 160°C (325°F).
- Flour pork cubes in a bowl.
- In a casserole dish, brown meat cubes in olive oil until browned.
- Add leeks and garlic and continue cooking for 3 minutes.
- Deglaze with stock to remove all the juices.
- Add rosemary, thyme, beer, mustard, turnips, maple syrup, cover and bake for 2 hours. Check seasoning.
- Serve with rice and green vegetables.
