Mini cocktail burger

MINI COCKTAIL BURGER

Ingredients

Stewed onions

  • 2 onions, thinly sliced
  • 2 garlic cloves, chopped
  • 90 ml (6 tablespoons) maple syrup
  • 90 ml (6 tbsp) water
  • salt and pepper to taste

Meat

  • 600 g (21 oz) ground beef
  • 1 onion, chopped
  • 2 cloves garlic
  • ¼ bunch parsley, leaves removed
  • 125 ml (1/2 cup) 2% milk
  • 60 ml (4 tbsp.) breadcrumbs
  • 1 egg
  • 15 ml (1 tbsp.) sweet paprika
  • 30 ml (2 tbsp) fat (butter, oil, Mycryo cocoa butter)
  • 10 slices bacon, crisp
  • Salt and pepper to taste

Preparation

Stewed onions

  1. In a hot pan with a little fat, brown the onions for 4 minutes, stirring regularly. Add the garlic, maple syrup, salt and pepper, and a little water. Cook over medium heat for 10 minutes or until completely evaporated.
  2. Check that the onions are cooked through; they should be tender and well-compote. Reserve

The meat

  1. Meanwhile, in a bowl, using a hand blender, blend the onion, garlic, parsley and milk.
  2. Add the ground beef, breadcrumbs, egg, salt and paprika and blend with a spatula.
  3. Preheat oven, rack in center, to 200°C (400°F).
  4. Form meatballs between your hands.
  5. In a hot frying pan, brown the meatballs in a little fat.
  6. Place on a baking sheet and bake for 8 minutes.
  7. Assemble the mini burgers, adding the condiments of your choice and a few vegetables (tomato, lettuce, baby greens), a few prepared stewed onions, ½ slice of bacon on top and enjoy.
