MINI COCKTAIL BURGER

Ingredients
Stewed onions
- 2 onions, thinly sliced
- 2 garlic cloves, chopped
- 90 ml (6 tablespoons) maple syrup
- 90 ml (6 tbsp) water
- salt and pepper to taste
Meat
- 600 g (21 oz) ground beef
- 1 onion, chopped
- 2 cloves garlic
- ¼ bunch parsley, leaves removed
- 125 ml (1/2 cup) 2% milk
- 60 ml (4 tbsp.) breadcrumbs
- 1 egg
- 15 ml (1 tbsp.) sweet paprika
- 30 ml (2 tbsp) fat (butter, oil, Mycryo cocoa butter)
- 10 slices bacon, crisp
- Salt and pepper to taste
Preparation
Stewed onions
- In a hot pan with a little fat, brown the onions for 4 minutes, stirring regularly. Add the garlic, maple syrup, salt and pepper, and a little water. Cook over medium heat for 10 minutes or until completely evaporated.
- Check that the onions are cooked through; they should be tender and well-compote. Reserve
The meat
- Meanwhile, in a bowl, using a hand blender, blend the onion, garlic, parsley and milk.
- Add the ground beef, breadcrumbs, egg, salt and paprika and blend with a spatula.
- Preheat oven, rack in center, to 200°C (400°F).
- Form meatballs between your hands.
- In a hot frying pan, brown the meatballs in a little fat.
- Place on a baking sheet and bake for 8 minutes.
- Assemble the mini burgers, adding the condiments of your choice and a few vegetables (tomato, lettuce, baby greens), a few prepared stewed onions, ½ slice of bacon on top and enjoy.
