Pecan and maple cake

PECAN AND MAPLE MOELLEUX

Output: 4 - Preparation time: 15 minutes - Cooking time: 20 minutes

Ingredients

  • 2 eggs
  • 90 ml (6 tablespoons) maple syrup
  • 120 ml (8 tablespoons) melted butter
  • 250 ml (1 cup) flour
  • 10 ml (2 tsp.) baking powder
  • 1 pinch salt
  • 125 ml (1/2 cup) coarsely chopped pecans

Maple coulis

  • 125 ml (1/2 cup) powdered sugar, sifted
  • 45 ml (3 tbsp.) dark maple syrup

Preparation

  1. Preheat oven, rack in center, to 190°C (375°F).
  2. Whisk eggs in a bowl.
  3. Add the maple syrup and melted butter.
  4. Stir in flour, baking powder and salt until smooth.
  5. Stir in pecans.
  6. Divide the mixture between 4 ramekins lined with butter and flour, and bake for 20 minutes.
  7. Leave to cool before unmolding.
  8. Warm the maple syrup in a microwave oven for 10 seconds.
  9. In a bowl, mix the sifted powdered sugar and maple syrup until smooth.
  10. Serve the pecan cakes with the prepared maple coulis.
