Mussels with curry

Ingredients

  • 1 large onion, chopped
  • 30 ml (2 tbsp) butter
  • 30 ml (2 tbsp) Madras curry
  • 2 cloves garlic, chopped
  • 125 ml (1/2 cup) dry white wine
  • 2 bags fresh mussels, cleaned
  • ½ bunch parsley, leaves removed, chopped
  • 125 ml (1/2 cup) 35% cream
  • 4 servings cooked fries

Preparation

  1. In a saucepan, brown the onion in the butter. Add the curry, garlic, white wine and mussels.
  2. Shake, cover and cook for 7 minutes over high heat.
  3. Add the cream, parsley and mix everything together.
  4. Serve in large bowls with the fries on the side
