Ingredients
- 1 large onion, chopped
- 30 ml (2 tbsp) butter
- 30 ml (2 tbsp) Madras curry
- 2 cloves garlic, chopped
- 125 ml (1/2 cup) dry white wine
- 2 bags fresh mussels, cleaned
- ½ bunch parsley, leaves removed, chopped
- 125 ml (1/2 cup) 35% cream
- 4 servings cooked fries
Preparation
- In a saucepan, brown the onion in the butter. Add the curry, garlic, white wine and mussels.
- Shake, cover and cook for 7 minutes over high heat.
- Add the cream, parsley and mix everything together.
- Serve in large bowls with the fries on the side
