Milk chocolate mousse

Mousse au chocolat au lait

Cooking time : about 10 minutes

INGREDIENTS

  • 250 mL (1 cup) milk chocolate
  • 125 mL (1/2 cup) 35% cream
  • 4 eggs, whites and yolks separated
  • 1 pinch of salt
  • 45 mL (3 tbsp.) sugar

PREPARATION

  1. In a double boiler, melt the chocolate in the cream.
  2. Meanwhile, in a bowl, using a hand mixer or whisk, beat the egg whites and pinch of salt until stiff.
  3. In another bowl, using a hand mixer or whisk, whip the egg yolks, then add the sugar.
  4. Add the chocolate to the egg yolk mixture.
  5. Then, using a spatula, gently fold in the egg whites.
  6. Fill jars or verrines and reserve in the refrigerator, 4 hours before tasting and possible decoration.
