INGREDIENTS
- 250 mL (1 cup) milk chocolate
- 125 mL (1/2 cup) 35% cream
- 4 eggs, whites and yolks separated
- 1 pinch of salt
- 45 mL (3 tbsp.) sugar
PREPARATION
- In a double boiler, melt the chocolate in the cream.
- Meanwhile, in a bowl, using a hand mixer or whisk, beat the egg whites and pinch of salt until stiff.
- In another bowl, using a hand mixer or whisk, whip the egg yolks, then add the sugar.
- Add the chocolate to the egg yolk mixture.
- Then, using a spatula, gently fold in the egg whites.
- Fill jars or verrines and reserve in the refrigerator, 4 hours before tasting and possible decoration.
