Ingredients
- 250 ml (1 cup) Quebec ground pork
- 250 ml (1 cup) Quebec ground beef
- 60 ml (4 tbsp) olive oil
- 250 ml (1 cup) red onion, chopped
- 250 ml (1 cup) red beans, rinsed and drained
- 250 ml (1 cup) corn kernels
- 250 ml (1 cup) red pepper, diced
- 500 to 750 ml (2 to 3 cups) Tex Mex grated cheese
- 125 ml (1/2 cup) Jalapenos, diced
- 250 ml (1 cup) cherry tomatoes, halved
- 250 ml (1 cup) green olives, sliced
- 250 ml (1 cup) avocado, pureed
- bag of tortillas
- Salt and pepper taste
Preparation
- Preheat the oven, rack in the center to 200 °C (400 °F).
- In a hot pan, brown the ground meats in the oil until browned.
- Add the onion, beans, corn, red pepper, salt, pepper and continue cooking for another 5 minutes.
- On a baking sheet covered with a silicone mat, place a layer of tortillas and spread some of the meat mixture on top, then 1/3 of the cheese, another layer of tortillas, on which you spread the rest of the meat mixture, the jalapenos, tomatoes, olives, the rest of the cheese and bake for 10 minutes. Then put under the grill to lightly brown the top.
- Before serving, add touches of avocado puree everywhere.
