Asian volcano noodles

Ingredients

  • 400 gr (13 1/2 oz) ground pork from Quebec
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 60 ml (4 tbsp) ginger, minced
  • 15 ml (1 tbsp) Sambal Oelek sauce
  • 5 ml (1 tsp) sweet or hot paprika
  • 60 ml (4 tbsp) soy sauce
  • 1.5 l (6 cups) vegetable broth
  • 15 ml (1 tbsp) miso paste
  • 30 ml (2 tbsp) soy sauce
  • 60 ml (4 tbsp) sesame oil
  • 4 servings cooked Ramen noodles
  • 4 eggs, soft-boiled
  • 500 ml (2 cups) edamame beans, blanched
  • 250 ml (1 cup) corn kernels
  • 500 ml (2 cups) sprouts Mango beans (bean sprouts)
  • 4 stalks of green onions, thinly sliced

Preparation

  1. In a hot pan, with a little fat, brown the ground pork, 2 to 3 minutes.
  2. Add the garlic, onion, ginger, hot sauce, paprika, soy sauce and let brown for another 2 to 3 minutes. Set aside.
  3. In a saucepan, heat the vegetable broth, add the miso, soy sauce, sesame oil and simmer for 15 minutes. Check the seasoning.
  4. In each bowl, divide the cooked noodles, broth, eggs, pork, mamane beans, corn and bean sprouts.
  5. Before serving, garnish with green onions.
