Asian noodles with pork

Ingredients

  • 1 lbs of ground pork
  • 1 can of finely chopped tomatoes (796 ml)
  • 4 tbsp (60 ml) vegetable oil
  • 1 onion, thinly sliced
  • 500 ml (2 cups) zucchini, cubed
  • 500 ml (2 cups) aubergine, cubed
  • 250 ml (1 cup) French mushrooms, sliced
  • 3 cloves garlic, chopped
  • 2 tbsp (30 ml) ginger, chopped
  • 15 ml (1 Tbsp) lemongrass, chopped (optional)
  • 60 ml (4 tbsp) sesame seeds
  • 5 tbsp. soy sauce
  • 4 tbsp Hoisin sauce
  • Asian hot sauce to taste
  • 4 servings of cooked Asian noodles (Soba, Chow Mein, Ramen)
  • 60 ml (4 tbsp) sesame oil

Preparation

  1. In a hot skillet, sauté the pork in vegetable oil for 5 minutes until it is brown. Remove and set aside.
  2. In the hot skillet, add the onion, zucchini and aubergine cubes, mushrooms and cook for 5 minutes.
  3. Add garlic, meat, ginger, lemongrass, crushed tomatoes, sesame seeds, soy sauce, Hoisin sauce, hot sauce to taste and reduce, 2 minutes.
  4. Add the noodles and sesame oil. Check seasoning.
