Mimosa egg

Ingredients

  • 8 hard-boiled eggs
  • 120 ml (8 tablespoons) homemade mayonnaise
  • 8 basil leaves
  • 1 pinch cayenne pepper
  • Salt and pepper to taste

Garnish

  • A few parsley leaves
  • 1 red bell pepper, diced

Preparation

  1. Halve the hard-boiled eggs, separating the yolks from the whites.
  2. Puree the basil leaves.
  3. In a bowl, using a fork, crumble the egg yolks.
  4. Add egg yolks, chilli, basil, salt and pepper to mayonnaise. Check seasoning.
  5. Fill a pastry bag with the prepared mixture.
  6. Fill each egg white with the mixture and decorate the top with parsley and bell pepper.
